TENOHA’s kitchen searches in every dish for the most authentic spirit of Japan with a more contemporary presentation. We offer dishes inspired by street food, such as KARAAGE or TONKATSU, and elaborated flavours such as the amberjack marinated in miso sauce.

Finally, you can enjoy a dessert with MATCHA or HOJICHA, traditional tastes but increasingly popular in the West.

東京は世界最大級の日本の都市。

豚肉の薄切り肉を生姜のタレをからめて焼いた料理。
東京を中心に家庭でのみ食されていたが、
東京、銀座で100年ほど前からレストランでメニューとして出されるようになった。
今では年代問わず愛されている定食の定番となっている。

Shogayaki (豚 ロ ー ス の 生姜 焼 き) significa letteralmente carne di maiale alla griglia con zenzero in giapponese ed è fatto marinando sottili fette di maiale in una semplice salsa di zenzero e salsa di soia prima di essere fritto in padella fino a doratura. La sua creazione è attribuita a un ristorante di Tonkatsu a Ginza, Tokyo, appena 100 anni fa, eppure è diventato uno dei piatti più comuni della cucina casalinga in Giappone insieme ad altri piatti classici moderni.

Shogayaki (豚ロースの生姜焼き) literally means Pork Grilled with Ginger in Japanese, and is made by marinating thin slices of pork in a simple gingery sauce before being pan-fried until golden brown. Its creation is attributed to a Tonkatsu restaurant in Ginza, Tokyo, just 100 years ago and yet it’s become a staple of home cooking in Japan along with other modern classics dishes.

The New Year is considered one of the most important holidays of the year and is celebrated by the Japanese with particular and curious customs, which also influence the kitchen. Osechi Ryori (お せ ち 料理) are the traditional foods enjoyed on New Year’s Eve in Japan. Served in an assortment of colorful dishes packed together in special boxes called jubako, which resemble bento boxes.

It is considered the most important meal of the year since each ingredient has a special meaning in welcoming the new year. For all fans of the Land of the Rising Sun TENOHA MILANO has designed a unique dish for you in the taste and full of tradition.

About ODEN おでん

L’oden (おでん) è un tipico piatto invernale della cucina giapponese in cui molti ingredienti sono fatti bollire per lungo tempo in un brodo a base di dashi e salsa di soia.
Gli ingredienti più comuni sono il daikon, iL konnyaku, le uova, vari tipi di tofu (Ganmodoki, Atsuage, Aburaage), il polpo e il Chikuwa (fish cake). Tutti questi ingredienti hanno lo scopo principale, vista la loro consistenza, di assorbire il brodo, per restituirlo ovviamente rovente al primo assaggio.
